Ingredients

  • 1 cup dried lentils (preferably green or brown)
  • 2 cups water or vegetable broth
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • 1/2 cup breadcrumbs
  • 2 tablespoons flaxseed meal mixed with 6 tablespoons water (flax egg)
  • Fresh parsley, chopped (for garnish)
