GRILLED CHICKEN SALAD

Ingredients

Mustard Ginger Vinaigrette

  • ¼ cup apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon grated ginger or ginger paste
  • ⅔ cup olive oil
  • Kosher salt and freshly ground black pepper, to taste
  • 1 tablespoon fresh herbs (parsley, basil, or thyme)

Grilled Chicken Salad

  • 2 large chicken breasts
  • 6-8 cups romaine lettuce, baby spinach, or mixed greens
  • 2 medium tomatoes, diced
  • 1 English cucumber, chopped

  • ¼ cup red onion, thinly sliced
  • 1 cup corn kernels (frozen and thawed, canned, or fresh)
  • 2 avocados, pitted, peeled, and sliced
  • Juice of 1 lime or lemon
