INGREDIENTS:

boneless, skinless chicken breasts

1 cup shredded smoked cheese (such as smoked gouda or cheddar)

2-3 fresh jalapeños, seeded and finely chopped

4 oz cream cheese, softened

1 teaspoon smoked paprika

1/2 teaspoon onion powder

salt and pepper to taste

1 tablespoon olive oil

Toothpicks (to secure the rolls)

 INSTRUCTIONS:

1. Prepare the Chicken:

Preheat the oven to 375°F (190°C).

Place each chicken breast between two sheets of plastic wrap and pound to about 1/4-inch thickness using a meat mallet or rolling pin.

Season both sides of the chicken breasts with salt, pepper, and smoked paprika.

2. Prepare the Filling:

In a bowl, combine the smoked cheese, chopped jalapeños, cream cheese, garlic powder, and onion powder. Mix until well combined.

3. Assemble the Chicken Rolls:

Spoon the cheese and jalapeño mixture onto each chicken breast, spreading it evenly.

Roll up the chicken breasts tightly and secure with toothpicks.

4. Cook the Chicken Rolls:

Heat the olive oil in a large oven-safe skillet over medium-high heat.

Sear the chicken rolls on all sides until golden brown, about 2-3 minutes per side.

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

Remove the toothpicks from the chicken rolls.
