Cashew Chicken

This Cashew Chicken recipe is a delicious and easy-to-make stir fry that combines tender chicken with a flavorful sauce and roasted cashews. It’s perfect for a quick weeknight meal or a tasty dinner option.

Ingredients

Sauce:

  • 1 tbsp cornstarch (cornflour)
  • 3 tbsp soy sauce (all-purpose or light)
  • 1 ½ tbsp Chinese cooking wine or mirin
  • 3 tbsp oyster sauce
  • 2 tsp sesame oil
  • Dash of white pepper (or black pepper substitute)

Stir Fry:

  • 500g (1 lb) chicken thigh, skinless boneless, cut into 1″ (2.5 cm) pieces
  • 2 tbsp peanut oil (or vegetable oil)
  • 2 garlic cloves, minced
  • ½ onion, chopped into ¾” (1.75 cm) pieces (yellow, brown, or white)
  • 1 green bell pepper, chopped into 0.8″ (2 cm) pieces
  • 6 tbsp water
  • ¾ cup roasted cashews, unsalted
