Zucchini, Feta, and Spinach Fritters with Garlic Tzatziki: A Mediterranean Delight

 

Ingredients

For the Garlic Tzatziki:

  1. 1 ½ cups Greek yogurt
  2. 4 cloves garlic, minced
  3. 1 small cucumber, peeled and chopped
  1. 2 teaspoons olive oil
  2. Juice of ½ lemon
  3. 2 tablespoons fresh dill, chopped
  4. Kosher salt, to taste

For the Zucchini, Feta, and Spinach Fritters:

  1. 2 medium zucchinis, grated
  2. 3 handfuls baby spinach, chopped
  3. ½ cup feta cheese, crumbled
  4. ¼ cup finely chopped fresh herbs (such as dill, mint, and oregano)
  5. 3 large eggs, lightly beate
  6. 2 scallions, minced
  7. 2 cloves garlic, minced
  8. ⅓ cup all-purpose flour
  9. ½ teaspoon baking powder
  10. Salt and black pepper, to taste
  11. Olive oil, for frying
