Chicken Feta Spinach Pasta

Ingredients:

  1. 8 ounces uncooked pasta
  2. 2 chicken breasts, cut into bite-size pieces
  3. 1 tablespoon olive oil
  4. 1/4 teaspoon dried oregano
  5. 1/4 teaspoon garlic powder
  6. 1/3 cup chicken broth
  7. 1/2 teaspoon Dijon mustard
    1 teaspoon lemon juice
  8. 1 (10.5 ounce) container of little tomatoes (grape, cherry, etc.), cut into halves
    1.5 cups (packed) fresh baby spinach
    3.5 ounces feta (cubed and packed in oil and herbs)
  9. Red pepper flakes to taste (optional)
  10. Freshly grated Parmesan cheese to taste (optional)
