ASPARAGUS STUFFED CHICKEN BREAST

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or non-stick cooking spray and set it aside.

Step 2: Prepare the Chicken Breasts

Start by preparing the chicken breasts. Lay each breast flat on a cutting board and carefully slice through the center horizontally to create a pocket. Be careful not to cut all the way through; you want the chicken to open like a book.

Season both the inside and outside of each chicken breast with garlic powder, onion powder, paprika, dried basil, salt, and pepper. This step ensures that the chicken is flavorful throughout.

Step 3: Prepare the Stuffing

In a small bowl, mix together the shredded mozzarella and grated Parmesan cheese. This cheese blend will add a rich, creamy filling to the chicken.

Lay 3-4 asparagus spears in the center of each chicken breast, lengthwise. Sprinkle a generous amount of the cheese mixture over the asparagus. If you like, you can also add a sprinkle of minced garlic for extra flavor.

Step 4: Stuff and Secure the Chicken

Carefully fold the chicken breasts over the asparagus and cheese filling. Secure the edges with toothpicks to prevent the filling from spilling out during cooking.

Step 5: Sear the Chicken

Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, add the stuffed chicken breasts to the skillet. Sear the chicken on each side for 2-3 minutes, or until golden brown. Searing helps to lock in the juices and gives the chicken a beautiful color.

Step 6: Bake the Chicken

After searing, transfer the skillet to the preheated oven. Bake the chicken breasts for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C). The cheese should be melted and bubbly, and the asparagus should be tender.

Step 7: Serve

Once the chicken is fully cooked, remove it from the oven and let it rest for a few minutes. Carefully remove the toothpicks, then slice the chicken and serve it hot. Garnish with fresh herbs or a sprinkle of Parmesan cheese for a finishing touch.
