- Chop and Dice:
- Peel and dice the potatoes.
- Peel and slice the carrot.
- Chop the pepper.
- Shred the cabbage.
- Slice the celery stalks.
- Chop the onion.
Step 2: Cook the Soup
- Sauté the Onion:
- In a large pot, heat a small amount of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
- Add Vegetables:
- Add the diced potatoes, sliced carrot, chopped pepper, shredded cabbage, and sliced celery to the pot. Stir to combine the vegetables.
- Season and Simmer:
- Season the vegetables with salt and dried basil. Add enough water to cover the vegetables by about an inch. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the vegetables are tender.
Step 3: Blend and Serve
- Blend the Soup:
