Instructions:
- Preheat the oven to 400°F (200°C).
- Wash and dry the potatoes, then poke several times with a fork.
- Brush the potatoes with olive oil and bake for 45-60 minutes or until tender.
- When the potatoes are cool enough to handle, slice them in half lengthwise.
- Scoop out the potato flesh, leaving about 1/4 inch on the skins.
- In a large bowl, mash the potato flesh with the cooked broccoli, soft butter, buttermilk, Greek yogurt, and half of the cheddar cheese.
- Stir in the chives, dill, garlic powder, onion flakes, onion powder, paprika, pepper, and salt.
- Spoon the mixture back into the potato skins.
- Sprinkle the remaining cheddar cheese on top.
- Place the potatoes back on the baking sheet and bake for another 20-25 minutes or until the cheese is melted and the edges are crispy.
- Serve hot. Enjoy!
