Chicken Alfredo Lasagna Rolls

Start by bringing a large pot of salted water to a boil. Add the lasagna noodles and cook according to the package instructions until al dente. Drain the noodles and lay them out on a baking sheet or clean kitchen towels to prevent them from sticking together.

Step 2: Prepare the Chicken Filling

In a large mixing bowl, combine the shredded chicken, ricotta cheese, 1 cup of the mozzarella cheese, 1/2 cup of the Parmesan cheese, minced garlic, and chopped parsley. Season the mixture with salt and freshly ground black pepper to taste. Stir until all the ingredients are well combined and set aside.

Step 3: Make the Alfredo Sauce

In a medium saucepan, melt the unsalted butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring the mixture to a gentle simmer. Stir in the grated Parmesan cheese, whisking constantly until the cheese is melted and the sauce is smooth. Season with salt and freshly ground black pepper to taste. Remove from heat.

Step 4: Assemble the Lasagna Rolls

Preheat your oven to 375°F (190°C).

Spread a thin layer of Alfredo sauce at the bottom of a 9×13-inch baking dish. Take a lasagna noodle and spread about 1/4 cup of the chicken and cheese filling evenly over the noodle. Carefully roll up the noodle and place it seam-side down in the baking dish. Repeat with the remaining noodles and filling.

Step 5: Top and Bake

Once all the lasagna rolls are assembled and placed in the baking dish, pour the remaining Alfredo sauce over the top. Sprinkle the remaining 3/4 cup of mozzarella cheese and 1/2 cup of Parmesan cheese evenly over the rolls. Cover the dish with foil and bake in the preheated oven for 25 minutes.

After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the tops of the rolls are lightly golden.

Step 6: Serve and Enjoy

Remove the lasagna rolls from the oven and let them cool for a few minutes before serving. Garnish with extra chopped parsley if desired. Serve the rolls hot, paired with a crisp salad or steamed vegetables for a complete meal.
