Chocolate coconut bars

  1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal.
  1. Make the Graham Cracker Crust:
  • In a mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated and resemble wet sand.
  1. Press the Crust:
  • Press the graham cracker mixture firmly and evenly into the bottom of the prepared baking dish. Use the back of a spoon or the bottom of a measuring cup to ensure it’s packed tightly.
  1. Bake the Crust:
  • Bake the crust in the preheated oven for about 10 minutes, or until it’s lightly golden. Remove from the oven and let it cool slightly.

Step 2: Prepare the Coconut Layer

  1. Mix Coconut and Condensed Milk:
  • In a large mixing bowl, combine the shredded coconut and sweetened condensed milk. Stir until the coconut is fully coated and the mixture is well combined.
  1. Spread the Coconut Mixture:
  • Spread the coconut mixture evenly over the baked crust, pressing down gently to create an even layer.
  1. Bake the Coconut Layer:
  • Bake for an additional 15-20 minutes, or until the edges are golden brown and the coconut layer is set. Remove from the oven and let it cool completely.

Step 3: Prepare the Chocolate Topping

  1. Melt the Chocolate Chips:
  • In a microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring after each interval, until the chocolate is fully melted and smooth.
  1. Pour the Chocolate:
  • Pour the melted chocolate over the cooled coconut layer, spreading it evenly with a spatula.
  1. Chill the Bars:
    • Place the baking dish in the refrigerator for about 1 hour, or until the chocolate is set.

Step 4: Serve the Chocolate Coconut Bars

  1. Cut into Bars:
    • Once the chocolate is fully set, use the parchment paper overhang to lift the bars out of the baking dish. Cut into squares or rectangles using a sharp knife.
  2. Serve and Enjoy:
    • Serve the chocolate coconut bars at room temperature or chilled. Store any leftovers in an airtight container in the refrigerator.
