CORN SALAD

Step 1: Prepare the Lime Vinaigrette

  1. In a small bowl, whisk together the lime juice, honey, ground cayenne pepper, garlic powder, onion powder, salt, and pepper.
  2. Slowly drizzle in the olive oil, whisking continuously until the vinaigrette is well blended.

Step 2: Cook the Corn

  1. Bring a large pot of water to a boil.
  2. Add the sugar and lime juice to the boiling water; stir to dissolve.
  3. Carefully add the corn to the boiling water, cover the pot, turn off the heat, and let the corn sit for 10 minutes.
  4. Plunge the cooked corn into ice-cold water to stop the cooking process.
  5. Once the corn has cooled, cut the kernels from the cob.

Step 3: Assemble the Salad

  1. In a large bowl, combine the cooked corn kernels, diced red peppers, halved grape tomatoes, chopped cilantro, chopped green onions, minced jalapeños, feta cheese, and thinly sliced red onion.
  2. Drizzle the salad with the prepared lime vinaigrette and toss to coat all the ingredients evenly.
