Crispy Zucchini Fritters with Mozzarella and Dill

Start by grating the zucchini using a fine grater. Once grated, place the zucchini in a sieve or colander, sprinkle with a small amount of salt, and let it sit for about 10 to 15 minutes. This step is crucial as the salt helps draw out excess moisture from the zucchini, ensuring your fritters are crispy rather than soggy. After the zucchini has rested, use your hands or the back of a spoon to squeeze out as much water as possible. The drier the zucchini, the crispier your fritters will be.

2. Mix the Ingredients

In a large mixing bowl, combine the drained zucchini, breadcrumbs, gluten (or flour), eggs, grated mozzarella cheese, sour cream, minced garlic, and chopped dill. Season the mixture with salt and black pepper to taste. Stir the ingredients together until well combined, ensuring that the mixture is cohesive but not overly wet.

3. Heat the Oil

Next, heat a generous amount of olive oil in a large frying pan over medium heat. The oil should be hot enough that a small drop of the batter sizzles immediately upon contact. This is key to achieving a golden-brown crust on your fritters. Make sure the oil covers the bottom of the pan sufficiently to prevent sticking.

4. Form and Fry the Fritters

Using a spoon, scoop out portions of the zucchini mixture and drop them into the hot oil, one at a time. Each fritter should be about the size of a tablespoon, but you can adjust the size based on your preference. Gently flatten the fritters with the back of the spoon to ensure even cooking.

5. Drain and Serve
