Ingredients
Mustard Ginger Vinaigrette
- ¼ cup apple cider vinegar
- 2 teaspoons Dijon mustard
- 2 tablespoons honey
- 1 tablespoon grated ginger or ginger paste
- ⅔ cup olive oil
- Kosher salt and freshly ground black pepper, to taste
- 1 tablespoon fresh herbs (parsley, basil, or thyme)
Grilled Chicken Salad
- 2 large chicken breasts
- 6-8 cups romaine lettuce, baby spinach, or mixed greens
- 2 medium tomatoes, diced
- 1 English cucumber, chopped
- ¼ cup red onion, thinly sliced
- 1 cup corn kernels (frozen and thawed, canned, or fresh)
- 2 avocados, pitted, peeled, and sliced
- Juice of 1 lime or lemon
