Herbed Shrimp and Watercress Salad

  • First Step
    Toss shrimp with 1/2 teaspoon salt, garlic, fennel seeds, and lemon zest in a bowl. Put aside.
  • Step Two
    Mix two tablespoons lemon juice, mustard, tarragon, and half a teaspoon of salt and pepper in a small bowl. Whisk in the oil gradually.
  • Step Three
    After heating a medium pot of water to a boil, pour ice water into a bowl. Bring the water to a boil, add the shrimp and aromatics, lower the heat, and simmer for 30 to 90 seconds, or until the shrimp are just slightly opaque throughout. Move right away to ice water to cool, then drain and throw away the aromatics.
  • Step Four
    Mix the celery, chives, endive, and cress in a big basin. Over the greens, drizzle about one-third of the dressing and toss to coat. Distribute among dishes, incorporating avocado and shrimp; pour over leftover dressing.
