Ingredients
For the Salad:
- 1 lb extra lean ground turkey or chicken
- 1 packet reduced-sodium taco seasoning
- 1 head iceberg lettuce, shredded
- 1 cup cherry tomatoes, halved
- 1 cup canned black beans, drained and rinsed
- 1 cup canned corn kernels, drained
- 1/2 cup diced red onion
- 1/2 cup shredded reduced-fat cheddar cheese
- 1/2 cup diced avocado
- 1/4 cup chopped fresh cilantro
- 1/4 cup sliced black olives (optional)
- 4 cups baked tortilla chips, crushed (use reduced-fat or low-carb tortilla chips for lower points)
For the Dressing:
- 1/2 cup plain non-fat Greek yogurt
- 2 tablespoons lime juice
- 1 tablespoon taco seasoning
