Miso Glazed Cod

Ingredients:

For the Miso Glaze:

– 2 tablespoons (30g) white miso paste

– 2 tablespoons (30g) honey

– 2 tablespoons (30g) soy sauce

– 2 tablespoons (30g) rice vinegar

– 2 tablespoons (30g) vegetable oil

– 2 cloves garlic, minced (about 1 tablespoon/15g)

– 1 teaspoon grated ginger

For the Cod:

– 4 cod fillets (about 6 ounces/170g each)

– Salt and pepper, to taste

Instructions:

1. Preheat oven to 400°F (200°C).

2. In a small saucepan, whisk together miso paste, honey, soy sauce, rice vinegar, and vegetable oil.

3. Add garlic and ginger to the saucepan and whisk until smooth.

4. Bring the glaze to a simmer over medium heat and cook for 2-3 minutes or until thickened.

5. Line a baking sheet with parchment paper or aluminum foil.

6. Place cod fillets on the prepared baking sheet.

7. Brush the miso glaze evenly over both sides of the cod fillets.

8. Season with salt and pepper to taste.

9. Bake for 12-15 minutes or until cooked through.

10. Serve hot, garnished with green onions and sesame seeds if desired.
