Step 1: Roasting the Beef
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Season the Beef: Pat the beef roast dry with paper towels. Generously season it with salt and pepper on all sides.
- Sear the Beef: Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the beef roast on all sides until it forms a golden-brown crust, about 3-4 minutes per side.
- Add Garlic and Rosemary: Add the minced garlic and chopped rosemary to the skillet, spreading them around the roast.
- Roast the Beef: Transfer the skillet to the preheated oven and roast for 20-25 minutes per pound, or until the internal temperature reaches your desired level of doneness (130°F for medium-rare, 140°F for medium).
- Rest the Beef: Remove the roast from the oven and transfer it to a cutting board. Tent it with aluminum foil and let it rest for at least 15 minutes before slicing.
