Smooth and Tangy Lemon Oatmeal Cookies

  1. Preheat your oven to 350 degrees F and line baking pans with parchment paper.
  2. In a medium bowl, combine the dry ingredients (flour, baking powder, baking soda, and salt).
  3. In the bowl of a stand mixer, beat together melted butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and mix until smooth.
  4. Mix in the lemon zest, lemon juice, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Gently fold in the rolled oats until evenly distributed.
  7. Drop spoonfuls of dough onto the prepared baking sheets, leaving space for the cookies to spread while baking.
  8. Bake for 10 to 12 minutes, or until the edges are golden brown but the centers are still soft. Allow the cookies to cool on the baking sheets for a minute before transferring them to a wire rack to cool completely.
