Stuffed Flatbread with Cheese

In a large mixing bowl, combine the all-purpose flour, salt, and sugar. Add the vegetable oil or melted butter and mix well. Gradually add warm water, a little at a time, until the dough comes together. Knead the dough for about 5-7 minutes until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.

Step 2: Prepare the Cheese Filling

In a medium bowl, combine the shredded cheese, chopped herbs, garlic powder, black pepper, and red pepper flakes (if using). Mix well to ensure the spices and herbs are evenly distributed throughout the cheese.

Step 3: Divide the Dough

After the dough has rested, divide it into 8 equal portions. Roll each portion into a ball.

Step 4: Roll Out the Dough

On a lightly floured surface, roll out one dough ball into a circle about 6 inches in diameter. Be careful not to make the dough too thin, as it needs to hold the filling without tearing.

Step 5: Add the Cheese Filling

Place about 2 tablespoons of the cheese filling in the center of the rolled-out dough. Gather the edges of the dough and bring them together over the filling, pinching to seal and form a pouch. Gently flatten the pouch and roll it out again into a circle about 6 inches in diameter. Repeat this process with the remaining dough balls and filling.

Step 6: Cook the Flatbreads

Heat a non-stick skillet or griddle over medium heat. Place one stuffed flatbread on the skillet and cook for 2-3 minutes, or until bubbles start to form on the surface and the bottom is golden brown. Flip the flatbread and cook for another 2-3 minutes until the other side is golden brown and the cheese is melted inside. Repeat with the remaining flatbreads.

Step 7: Brush with Butter and Serve

If desired, brush the cooked flatbreads with melted butter or ghee for added flavor and a glossy finish. Garnish with additional chopped herbs if you like. Serve the stuffed flatbreads warm, either on their own or with a dipping sauce.
