Taco Meatloaf (Mexican Meatloaf)

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper for easy removal.

Step 2: Prepare the Meatloaf Mixture

  1. Combine Ingredients: In a large mixing bowl, combine the ground beef, taco seasoning mix, crushed tortilla chips (or breadcrumbs), salsa, shredded cheddar cheese, chopped onion, minced garlic, beaten eggs, chopped cilantro, and diced jalapeños (if using). Season with salt and pepper to taste.
  2. Mix Well: Use your hands or a large spoon to mix all the ingredients thoroughly until well combined.

Step 3: Shape and Bake the Meatloaf

  1. Shape the Mixture: Transfer the meat mixture to the prepared loaf pan. Press it down gently to shape it into a loaf.
  2. Bake: Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).

Step 4: Add the Cheese Topping

  1. Add Cheese: About 10 minutes before the meatloaf is done, sprinkle the shredded Mexican cheese blend over the top of the meatloaf.
  2. Melt Cheese: Return the meatloaf to the oven and continue baking until the cheese is melted and bubbly.

Step 5: Let it Rest and Serve

  1. Rest: Remove the meatloaf from the oven and let it rest for about 10 minutes. This allows the juices to redistribute, making it easier to slice.
  2. Slice and Serve: Slice the meatloaf into thick pieces and serve with a dollop of sour cream and extra salsa on the side.
