Tortillas with Eggs

  • Begin by warming the tortillas in a non-stick skillet over medium heat. You can also use a dry cast iron skillet if preferred. Warm each tortilla for about 30 seconds on each side or until they are lightly toasted and flexible. Remove and set aside.

2. Scramble the Eggs:

  • In a bowl, beat the eggs with a pinch of salt and pepper until well combined.
  • Pour the beaten eggs into the skillet used for the tortillas. If avoiding oil, ensure the skillet is non-stick or very lightly greased with a minimal amount of healthy oil like olive or avocado oil.
  • Cook the eggs on medium heat, stirring gently until they begin to set but are still slightly runny.

3. Assemble the Dish:

  • Lay the warm tortillas flat on a plate. As the eggs finish cooking, spoon them evenly onto each tortilla.
  • Add any additional toppings you prefer. Fresh vegetables like tomatoes and avocados add freshness and texture, while a sprinkle of cheese can add richness.

4. Serve:

  • Fold the tortillas over the egg, like a taco or roll them up if you prefer.
  • Serve immediately while hot. A side of salsa or hot sauce can complement the flavors beautifully.
